Taco Darbar started with a simple idea: the spice blends we grew up with deserved a place on a tortilla. We spent months testing tandoori marinades against birria braises, chutneys against salsas, until the two traditions stopped competing and started working together.
“Darbar” means a royal court — a gathering place where everyone is welcome at the table. That’s the feeling we wanted for the food: bold enough to feel special, familiar enough to order every week.
